Kickin’ Scotch Eggs

Sometimes I find myself oddly hungry in the middle of the day, and I’m pretty tired of making sandwiches to hold me off till dinner time. In come scotch eggs to save the day!

I tried to keep this recipe as simple as possible because making scotch eggs for the first time can be tricky. What I love most about this recipe is the spiciness; everything is oh so flavorful and oh so…HOT!

What you need:

– 8 oz. pork sausage meat

– 2 tsp powdered cayenne pepper

– 1/2 tsp garlic powder

– 1/2 tsp onion powder

– parsley flakes

-pinch of salt

– 3 hardboiled eggs

– 1 uncooked egg, beaten

– 1 cup breadcrumbs

– Vegetable oil

 

Steps:

1. Fill a small pot with enough vegetable cooking oil to deep fry. Heat on low so that this is hot by the time you’re ready to fry.

2. Mix sausage meat, cayenne pepper, garlic powder and onion powder in a bowl. Add a shake of parsley flakes and a pinch of salt, and make sure everything is mixed uniformly.

3. Divide this mixture into three parts, use one part to coat each of the eggs completely, ensuring that none of the egg surface is exposed – you may have to do some patchwork here!

4. After coating, roll each coated egg in the beaten egg to completely. Then cover each coated egg completely in breadcrumbs. Fry until evenly browned and cooked through.

Once you get the hang of it, this recipe is one you’re gonna turn to pretty often, trust me! you can also be more adventurous with trying different kinds and combinations of seasoning fir the sausage meat. How do you like your scotch eggs?
